  • 1 box Jiffy Corn Muffin Mix
  • 1 can (15 ounces) creamed corn, undrained
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the Jiffy Corn Muffin Mix, creamed corn, whole kernel corn, sour cream, and eggs. Mix until just combined. Do not overmix.
  3. Slowly pour the melted butter over the top of the batter in the baking dish. Do not stir the butter in; let it sit on top.
  4. Bake for 45 to 55 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean.
