1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
For the Syrup:
1 cup granulated sugar
1/2 cup water
1/4 cup light corn syrup
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
While the cake is baking, prepare the syrup. In a small saucepan, combine 1 cup sugar, water, and corn syrup. Bring to a boil over medium heat, stirring until the sugar dissolves.
Boil for 5 minutes without stirring. Remove from heat and stir in 1 teaspoon of vanilla extract.
Once the cake is out of the oven, immediately poke holes all over the top with a fork or skewer.
Slowly and evenly pour the hot syrup over the entire cake, allowing it to soak in.
Let the cake cool in the pan before serving.
