This is the foolproof, fluffy egg bake casserole you need for easy breakfasts, brunches, or meal prep. Customize it with your favorite mix-ins for a high-protein, cheesy dish that always works.

Ingredients

Scale
  • 12 large eggs
  • 1 cup cottage cheese (2% or whole milk for best texture)
  • 1 cup milk (any kind)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or blend)
  • 2 cups cooked, diced protein (e.g., sausage, ham, or cooked turkey bacon)
  • 1 cup chopped vegetables (e.g., spinach, bell peppers, or broccoli florets)
  • 1 tablespoon butter or cooking spray for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a large bowl, whisk together the eggs, cottage cheese, milk, salt, pepper, and garlic powder until well combined and slightly frothy. This step helps create a fluffy texture.
  3. Gently fold in the shredded cheese, your chosen cooked protein, and chopped vegetables. Do not overmix.
  4. Pour the entire mixture evenly into the prepared baking dish.
  5. Bake for 35 to 45 minutes, or until the center is set and a knife inserted near the middle comes out clean. The top should be lightly golden brown.
  6. Remove the egg bake from the oven and let it rest for 5 to 10 minutes before slicing and serving.

Notes

  • For a high-protein egg bake, increase the cottage cheese to 1.5 cups and use lean meat like turkey sausage.
  • To make this a make ahead breakfast casserole, assemble everything the night before, cover tightly, and refrigerate. Add 5-10 minutes to the baking time if baking directly from the refrigerator.
  • If you want a keto egg bake low carb version, skip any starchy fillers like bread or hash browns and focus on cheese and meat.
