1 tablespoon vegetable oil
1 cup long-grain white rice
1/2 medium onion, finely chopped
2 cloves garlic, minced
1 1/2 cups chicken broth
1 (8 ounce) can tomato sauce
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro (for garnish)
Instructions
Heat the vegetable oil in a medium saucepan or pot over medium heat.
Add the rice to the pot and cook, stirring constantly, until the grains turn light golden brown, about 5 to 7 minutes.
Add the chopped onion to the pot and cook until softened, about 3 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth, tomato sauce, cumin, salt, and pepper. Stir everything together well.
Bring the mixture to a boil. Once boiling, immediately reduce the heat to low, cover the pot tightly with a lid, and simmer for 20 minutes without lifting the lid.
Remove the pot from the heat and let it stand, covered, for 10 minutes. Do not remove the lid during this resting period.
Fluff the rice gently with a fork before serving. Garnish with fresh cilantro.
Notes
Rinsing the rice before toasting is optional but helps prevent sticking.
Use vegetable broth instead of chicken broth for a vegetarian version.
For a deeper red color, substitute 1/2 cup of the chicken broth with water and 1 tablespoon of tomato paste.
