1 pound spaghetti
1/2 cup extra virgin olive oil
6 cloves garlic, thinly sliced
1/4 teaspoon red pepper flakes (or more, to taste)
Salt, to taste
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional, for serving)
Instructions
Cook spaghetti according to package directions in salted boiling water. Reserve about 1 cup of the pasta water before draining.
While the pasta cooks, heat olive oil in a large skillet over medium-low heat.
Add the sliced garlic and red pepper flakes to the skillet. Cook gently, stirring occasionally, until the garlic is fragrant and lightly golden. Do not let the garlic burn.
Add the drained spaghetti to the skillet with the garlic and oil.
Toss well to coat the pasta evenly.
Add about 1/2 cup of the reserved pasta water to the skillet. Toss continuously until a light sauce forms and coats the pasta. Add more pasta water if needed to reach desired consistency.
Season with salt to taste.
Serve immediately, garnished with fresh parsley and optional Parmesan cheese.
Notes
Use good quality olive oil for the best flavor.
Adjust the amount of red pepper flakes to your spice preference.
Don’t overcook the garlic; it should be golden, not brown.
