- 1 pound dried Great Northern or Navy beans, rinsed
- 1 pound fully cooked ham, diced
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (adjust after cooking due to ham saltiness)
- Place the rinsed beans, diced ham, onion, carrots, and celery into the slow cooker.
- Add the chicken broth, thyme, bay leaf, and pepper.
- Stir all ingredients together well.
- Cover and cook on low for 7 to 8 hours or on high for 3 to 4 hours, until the beans are tender.
- Remove and discard the bay leaf before serving.
- Taste and add salt if needed. Serve hot.
Notes
- If you prefer a thicker soup, remove about 1 cup of the cooked beans and mash them, then stir the mash back into the soup before serving.
- Soaking the dried beans overnight can reduce the overall cooking time slightly.
