  • 1/4 cup lime juice (about 2 limes)
  • 2 tablespoons olive oil, divided
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large yellow onion, sliced into strips
  • 2 large bell peppers (one red, one green), sliced into strips
  • 2 cloves garlic, minced
  • 1/4 cup beef broth or water
  • Warm flour or corn tortillas, for serving
  • Optional toppings: sour cream, shredded cheese, salsa, guacamole

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the lime juice, 1 tablespoon of olive oil, soy sauce, Worcestershire sauce, cumin, chili powder, smoked paprika, oregano, salt, and pepper.
  2. Marinate the Steak: Place the skirt steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal and refrigerate for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours, as the acid in the lime juice can start to break down the meat too much.
  3. Prep for Cooking: Remove the steak from the marinade, letting excess drip off. Discard the remaining marinade. Slice the marinated steak against the grain into thin strips (about 1/4 inch thick).
  4. Sauté Vegetables: Heat 1 tablespoon of olive oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until shimmering. Add the sliced onions and bell peppers. Cook for 5 to 7 minutes, stirring occasionally, until they are tender-crisp and slightly charred. Add the minced garlic during the last minute of cooking. Remove the vegetables from the skillet and set them aside on a plate.
  5. Sear the Steak: Add the remaining 1 tablespoon of olive oil to the hot skillet. Add the steak strips in a single layer (work in batches if necessary to avoid overcrowding the pan, which causes steaming instead of searing). Cook for 2 to 3 minutes per side until nicely browned and cooked through to your desired doneness.
  6. Combine and Finish: Return the cooked vegetables to the skillet with the steak. Pour in the beef broth or water. Stir everything together quickly, scraping up any browned bits from the bottom of the pan. Cook for 1 minute until the liquid has mostly evaporated, creating a slight sizzle.
  7. Serve Immediately: Transfer the sizzling steak fajitas mixture to a serving platter. Serve immediately with warm tortillas and your favorite toppings.

Notes

  • For the best restaurant-style sizzle, use a cast-iron skillet and make sure it is very hot before adding the steak.
