  • 1 tablespoon olive oil
  • 1 pound ground beef (or ground turkey)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked white rice
  • Optional toppings: Shredded cheddar cheese, sour cream

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground beef and cook until browned, breaking it up as it cooks. Drain off any excess fat.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in minced garlic and chopped bell peppers. Cook for 5 minutes until peppers begin to soften.
  5. Pour in crushed tomatoes, tomato sauce, and beef broth. Stir well.
  6. Add Worcestershire sauce, oregano, basil, salt, and pepper. Bring the soup to a simmer.
  7. Stir in the uncooked white rice.
  8. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and cooked through. Stir occasionally to prevent sticking.
  9. Taste and adjust seasonings if needed before serving.
  10. Serve hot with your favorite toppings.

Notes

  • You can use any color bell peppers you prefer for variety.
  • For a vegetarian option, substitute the ground beef with lentils or plant-based ground crumbles.
  • If you prefer a thicker soup, use slightly less beef broth or let it simmer uncovered for the last 10 minutes.
