4 cups cooked sushi rice
1/4 cup rice vinegar
2 tablespoons sugar
1 teaspoon salt
1 pound imitation crab meat, shredded
1/2 cup mayonnaise
1/4 cup cream cheese, softened
2 tablespoons Sriracha (optional, for spicy mayo)
1 tablespoon soy sauce
1/4 cup panko breadcrumbs (for topping)
2 tablespoons melted butter (for topping)
Furikake seasoning, for garnish
Nori sheets, cut into strips, for serving
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Prepare the sushi rice: In a small bowl, whisk together the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm cooked sushi rice. Spread the seasoned rice evenly into the bottom of the prepared baking dish.
Make the crab mixture: In a medium bowl, combine the shredded imitation crab, mayonnaise, softened cream cheese, Sriracha (if using), and soy sauce. Mix until just combined.
Spread the crab mixture evenly over the layer of seasoned rice in the baking dish.
Prepare the topping: Mix the panko breadcrumbs and melted butter together. Sprinkle this mixture evenly over the crab layer.
Bake for 15 to 20 minutes, or until the topping is golden brown and the filling is heated through.
Remove from the oven and let it cool for 5 minutes. Sprinkle generously with Furikake seasoning.
Serve warm directly from the dish with strips of nori for scooping.
Notes
For a salmon version, replace half the imitation crab with cooked, flaked salmon.
You can mix a small amount of Kewpie mayonnaise into the rice layer for extra richness before spreading the crab mixture on top.
Serve this dish with sliced avocado or cucumber on the side for added freshness.
