This easy one-pot Taco Soup recipe is a comforting and flavorful meal perfect for a weeknight dinner. It combines ground beef, beans, corn, tomatoes, and taco seasoning for a hearty taste of taco night in a bowl.

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 3 cups beef broth
  • 1 cup corn (frozen or canned)
  • Optional toppings: shredded cheese, sour cream, tortilla chips, avocado

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess fat.
  2. Add the chopped onion and bell pepper to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the taco seasoning, kidney beans, black beans, diced tomatoes, Rotel tomatoes, beef broth, and corn to the pot.
  5. Bring the soup to a boil, then reduce heat to low, cover, and simmer for at least 20 minutes to allow the flavors to meld. For a richer flavor, simmer for up to an hour.
  6. Serve hot, garnished with your favorite toppings like shredded cheese, sour cream, tortilla chips, or avocado.
