This easy one-pot Taco Soup is a comforting and flavorful meal. It combines ground beef, beans, corn, tomatoes, and taco seasoning for a delicious twist on taco night. Top it with your favorite garnishes for a complete and satisfying dish.

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 packet taco seasoning
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, crushed tortilla chips

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the drained and rinsed kidney beans and black beans, drained corn, diced tomatoes, and Rotel tomatoes to the pot.
  5. Stir in the taco seasoning, chili powder, cumin, and cayenne pepper (if using).
  6. Pour in the beef broth. Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes, or longer for flavors to meld.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with your favorite garnishes.

Notes

  • For a leaner option, use ground turkey instead of ground beef.
  • Adjust the spice level by adding more or less cayenne pepper.
  • This soup can be made ahead of time and reheats well.
