Make this simple, comforting ground beef tamale pie casserole with a quick cornbread topping for a satisfying weeknight dinner.

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 box (8.5 ounces) corn muffin mix (like Jiffy)
  • Ingredients required for the corn muffin mix (usually 1 egg and 1/3 cup milk)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and onion. Cook until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the tomato sauce, drained corn, drained black beans, green chilies, chili powder, cumin, salt, and pepper into the skillet with the beef mixture. Heat through for about 5 minutes.
  4. Pour the meat mixture evenly into the prepared baking dish.
  5. Prepare the corn muffin mix according to the package directions, usually mixing the dry mix with 1 egg and 1/3 cup milk.
  6. Spoon or spread the cornbread batter evenly over the meat mixture in the baking dish.
  7. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the dish from the oven. Sprinkle the shredded cheddar cheese over the top. Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  9. Let the tamale pie cool for 10 minutes before cutting and serving.

Notes

  • You can add 1/4 cup of chopped jalapeños to the meat mixture for extra heat.
  • For a richer topping, substitute the milk in the cornbread mix with sour cream or buttermilk.
  • This casserole freezes well before baking; cover tightly and freeze for up to three months. Thaw overnight in the refrigerator before baking.
