  • 12 plain bagels, cut into 1-inch cubes
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup chopped yellow onion
  • 1 cup chopped green bell pepper
  • 8 ounces shredded cheddar cheese
  • 8 ounces shredded Monterey Jack cheese
  • 6 large eggs
  • 3 cups milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 tablespoons butter, melted
  • 2 tablespoons everything bagel seasoning

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the cubed bagels evenly in the prepared baking dish.
  3. Top the bagels with the cooked breakfast sausage, chopped onion, and chopped green bell pepper.
  4. Sprinkle the cheddar cheese and Monterey Jack cheese over the sausage and vegetables.
  5. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
  6. Pour the egg mixture evenly over the bagel and cheese mixture in the baking dish.
  7. Drizzle the melted butter over the top and sprinkle with everything bagel seasoning.
  8. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the bagels to soak up the egg mixture.
  9. Preheat your oven to 350°F (175°C).
  10. Bake the casserole uncovered for 45-55 minutes, or until the casserole is puffed up, golden brown, and a knife inserted into the center comes out clean.
