Make this easy cold pasta salad featuring feta cheese, fresh vegetables, and a bright lemon herb vinaigrette. It is perfect for potlucks or make ahead lunches.

Ingredients

  • 1 pound rotini or orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • For the Vinaigrette: 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop cooking. Set aside to cool completely.
  2. While the pasta cools, prepare the vinaigrette. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
  3. In a large bowl, combine the cooled pasta, halved tomatoes, diced cucumber, sliced red onion, Kalamata olives, and chopped parsley.
  4. Pour the lemon herb vinaigrette over the pasta and vegetable mixture. Toss gently until everything is evenly coated.
  5. Gently fold in the crumbled feta cheese last to prevent it from breaking apart too much.
  6. Cover the salad and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For best flavor, prepare this make ahead pasta salad up to 24 hours in advance.
  • If you prefer a creamier texture, you can add 1/4 cup of plain Greek yogurt to the vinaigrette mixture.
  • Rotini or orzo are good pasta shapes for this salad, but use any small shape you prefer.
