1 sheet puff pastry, thawed
1/2 cup chopped artichoke hearts, drained
1/2 cup crumbled feta cheese
1/4 cup chopped fresh spinach
1 tablespoon olive oil
1 clove garlic, minced
1/4 teaspoon black pepper
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, combine the chopped artichoke hearts, feta cheese, spinach, olive oil, minced garlic, and black pepper. Mix well.
Unfold the puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
Place a spoonful of the feta-spinach-artichoke mixture onto the center of each puff pastry square.
Fold the pastry diagonally to form a triangle, pressing the edges to seal. Alternatively, you can bring the four corners of the square together to form a small pouch and pinch to seal.
Place the bites onto the prepared baking sheet.
Brush the tops of the bites with the beaten egg wash.
Bake for 15-20 minutes, or until the puff pastry is golden brown and puffed up.
Let cool slightly before serving.
Notes
Ensure your puff pastry is fully thawed but still cold for best results.
You can add a pinch of red pepper flakes for a little heat.
