Instructions

  1. Place chicken breasts, chicken broth, sweet chili sauce, sriracha, soy sauce, ginger, and garlic in a slow cooker or pot.
  2. Cook on low for 3-4 hours or simmer on the stovetop until the chicken is cooked through and easily shredded.
  3. Remove chicken and shred it using two forks. Return the shredded chicken to the sauce mixture and stir to coat completely.
  4. Preheat your oven to 375 degrees F (190 degrees C).
  5. Spread tortilla chips in a single layer on a large baking sheet.
  6. Spoon the firecracker chicken mixture evenly over the chips.
  7. Sprinkle both Monterey Jack and cotija cheese over the chicken.
