  • 1 cup cottage cheese (full fat recommended)
  • 6 large eggs
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup cooked, crumbled bacon (optional add-in)
  • 1/4 cup finely chopped spinach (optional add-in)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat your oven to 300°F (150°C). Lightly grease a 12-cup muffin tin with cooking spray.
  2. In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth, about 30 seconds. This step is key for fluffy texture.
  3. Divide the shredded cheese and any desired add-ins (like bacon or spinach) evenly among the prepared muffin cups.
  4. Carefully pour the blended egg mixture over the fillings in each cup, filling them about three-quarters full.
  5. Place the muffin tin on a baking sheet. Bake for 20 to 25 minutes. The bites are done when they are set in the center and a toothpick inserted comes out clean.
  6. Remove from the oven and let the egg bites cool in the tin for 5 minutes before carefully removing them.
  7. For meal prep, cool completely before storing in an airtight container in the refrigerator for up to 4 days or freezing for later use. Reheat in the microwave for 30-60 seconds.

  • For a true copycat texture, use a blender to ensure the cottage cheese is fully incorporated.
  • If you prefer a different flavor, substitute the bacon and spinach with cooked sausage or finely chopped broccoli florets.
