Follow these steps to make thick, light, and airy waffles with a crispy exterior and soft interior.

  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs, separated
  • 1 3/4 cups buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate medium bowl, whisk the egg yolks, buttermilk, vegetable oil, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter. A few lumps are fine.
  4. In a clean, grease-free bowl, beat the egg whites with an electric mixer until stiff peaks form.
  5. Gently fold the beaten egg whites into the batter in two additions. Use a spatula to incorporate them carefully to keep the air in the batter.
  6. Preheat your waffle iron according to the manufacturer’s directions. Lightly grease the plates if necessary.
  7. Pour the batter onto the hot waffle iron, filling it to the recommended level for your machine.
  8. Cook until the waffle is golden brown and crisp, usually 4 to 6 minutes, depending on your iron.
  9. Remove the waffle carefully and serve immediately.

Notes

  • For extra crispness, place finished waffles on a wire rack in a single layer in a 200°F oven while you cook the remaining batches.
  • Buttermilk reacts with the baking soda to create extra lift, which is key to fluffiness.
  • Do not stir the batter after adding the egg whites; gently fold them in to preserve the air.
