1 tablespoon butter
1 large yellow onion, thinly sliced
2 cups long-grain white rice, uncooked
3 cups beef broth
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded Gruyère cheese (optional)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
Melt the butter in a large oven-safe skillet over medium heat. Add the sliced onion and cook slowly, stirring occasionally, for 15 to 20 minutes until the onions are deep golden brown and caramelized.
Stir the uncooked rice, beef broth, thyme, salt, and pepper into the skillet with the caramelized onions. Mix well to combine all ingredients.
Bring the mixture to a simmer on the stovetop.
Cover the skillet tightly with a lid or aluminum foil. Transfer the skillet to the preheated oven.
Bake for 25 minutes. Do not lift the lid during baking.
Remove the dish from the oven. If using cheese, sprinkle the Gruyère evenly over the top. Cover again and let it stand for 5 minutes off the heat.
Fluff the rice gently with a fork before serving.
Notes
For deeper flavor, use homemade beef broth instead of store-bought.
If you do not have an oven-safe skillet, transfer the rice mixture to a standard baking dish after simmering on the stove.
You can substitute Gruyère cheese with Swiss cheese if needed.
