4 large yellow onions, thinly sliced
4 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon granulated sugar
1 teaspoon salt
1 teaspoon black pepper
2 cloves garlic, minced
8 cups beef broth
1 cup dry white wine
1 tablespoon fresh thyme leaves
1 bay leaf
Baguette slices
Gruyere cheese, grated
Instructions
In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add onions and sugar, stirring to coat. Cook, stirring occasionally, for 30-45 minutes, until onions are deeply caramelized and golden brown.
Stir in salt, pepper, and minced garlic. Cook for 1 minute more until fragrant.
Pour in white wine and scrape up any browned bits from the bottom of the pot. Let it simmer and reduce for 5 minutes.
Add beef broth, thyme leaves, and bay leaf. Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes to allow flavors to meld. Remove bay leaf.
Preheat your broiler.
Ladle soup into oven-safe bowls. Top each bowl with a few baguette slices and a generous amount of grated Gruyere cheese.
Place bowls on a baking sheet and broil for 2-3 minutes, or until cheese is melted, bubbly, and golden brown.
Notes
For extra depth of flavor, you can caramelize the onions low and slow for even longer.
If you don’t have dry white wine, you can omit it or use a splash of sherry.
