- 2 oz Blanco Tequila
- 1 oz Fresh Lime Juice
- 0.75 oz Agave Nectar (or Simple Syrup)
- 3 thin slices Fresh Jalapeño (seeds removed for less heat)
- Ice
- Coarse Salt (for rim)
- Lime wedge (for garnish)
- Prepare the glass rim by rubbing a lime wedge around the edge of a rocks glass, then dip the rim into coarse salt. Fill the glass with ice.
- Place the three jalapeño slices into a cocktail shaker. Gently muddle them 3 to 4 times. Do not over-muddle, as this releases bitter flavors.
- Add the tequila, fresh lime juice, and agave nectar to the shaker.
- Fill the shaker with ice. Seal the shaker and shake hard until the outside is very cold, about 15 seconds.
- Double strain the mixture (using a Hawthorne strainer and a fine-mesh sieve) into the prepared, ice-filled glass to remove small jalapeño pieces.
- Garnish with a lime wedge.
Notes
- Use a Blanco (silver) tequila for the cleanest flavor that lets the jalapeño and lime shine.
- Adjust the agave nectar amount based on the tartness of your limes and your preferred sweetness level.
- For a milder spice, use only two slices of jalapeño and leave the seeds in. For more heat, use four slices with seeds.
- If you prefer a sweeter rim, mix half salt and half granulated sugar.
