- 1 cup plain Greek yogurt (2% or full fat recommended)
- 1/2 cup creamy peanut butter
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
- Line a small baking sheet or plate with parchment paper.
- In a medium bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Mix until completely smooth.
- If using, gently fold in the mini chocolate chips.
- Drop rounded tablespoons of the mixture onto the prepared baking sheet, forming small clusters or bites.
- Place the baking sheet in the freezer for at least 3 to 4 hours, or until the bites are completely solid.
- Transfer the frozen bites to an airtight, freezer-safe container or zip-top bag for storage.
Notes
- For a lower sugar option, substitute the honey or maple syrup with a few drops of liquid stevia or monk fruit sweetener.
- If your peanut butter is very stiff, microwave it for 10 seconds before mixing to make combining easier.
- These bites store well in the freezer for up to one month.
