Make a quick and delicious fruit pizza using store-bought sugar cookie dough for the base and a simple cream cheese frosting. This recipe is perfect for a fast dessert.

Ingredients

Scale
  • 1 package (16.5 ounces) refrigerated sugar cookie dough
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 4 cups mixed fresh fruit (strawberries, blueberries, kiwi, mandarin oranges recommended)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 12-inch pizza pan or line a baking sheet with parchment paper.
  2. Press the refrigerated sugar cookie dough evenly onto the prepared pan to form a large, thin cookie crust.
  3. Bake the sugar cookie crust for 12 to 15 minutes, or until the edges are lightly golden brown. Do not overbake; the center should still look slightly soft.
  4. Remove the crust from the oven and let it cool completely on the pan. This cooling step is important for the frosting.
  5. While the crust cools, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and milk until the mixture is smooth and creamy.
  6. Once the cookie crust is fully cooled, spread the cream cheese frosting evenly over the top, leaving a small border for the crust edge.
  7. Arrange your mixed fresh fruit decoratively over the frosting. You can create patterns or simply scatter the fruit for a colorful look.
  8. Chill the fruit pizza for at least 30 minutes before slicing and serving. This helps the frosting set.

Notes

  • For a mini fruit pizza option, press small amounts of dough onto a baking sheet and bake individual rounds. Adjust bake time slightly.
  • If you want a thicker frosting, reduce the amount of milk used in the recipe.
  • Use fruits that are dry; patting down any wet fruit with a paper towel prevents the frosting from becoming watery.
