Ingredients
Scale
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed avocado (about 2 medium)
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
In a large bowl, beat the mashed avocado with the granulated sugar and brown sugar until smooth and creamy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the chocolate chips.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
Let the brownies cool completely in the pan before cutting into squares.
Notes
Ensure your avocado is ripe for easy mashing and a smooth texture.
For an extra chocolatey flavor, you can add 1/4 cup of espresso powder to the dry ingredients.
Store cooled brownies in an airtight container at room temperature for up to 3 days.
