Funeral Potatoes are a creamy, cheesy hash brown casserole that’s incredibly easy to make. This comforting side dish is perfect for potlucks, holidays, or any gathering where you want to serve a crowd a delicious and satisfying favorite.

  • 3 cups frozen shredded hash brown potatoes, thawed
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped onion (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed cornflakes
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the thawed hash brown potatoes, condensed cream of chicken soup, sour cream, 1/2 cup melted butter, shredded cheddar cheese, chopped onion (if using), salt, and pepper.
  3. Stir everything together until well combined.
  4. Spread the mixture evenly into a 9×13 inch baking dish.
  5. In a small bowl, mix the crushed cornflakes with the remaining 2 tablespoons of melted butter.
  6. Sprinkle the buttered cornflake mixture evenly over the potato casserole.
  7. Bake for 30-40 minutes, or until the casserole is bubbly and the topping is golden brown and crunchy.
  8. Let it rest for a few minutes before serving.

Notes

  • For an extra cheesy casserole, you can add another 1/2 cup of cheddar cheese into the potato mixture.
  • If you don’t have cornflakes, crushed buttery crackers or breadcrumbs can be used as a topping.
  • Ensure your hash browns are fully thawed for easier mixing.
