  • 1 1/4 cups milk
  • 1/2 cup rainbow sprinkles (nonpareils work best)
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients. Beat with an electric mixer on low speed until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the eggs, vanilla extract, and milk.
  5. Gradually add the wet ingredients to the dry ingredients, beating on medium speed until just combined. Do not overmix.
  6. Gently fold in the rainbow sprinkles.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  10. While the cakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
  11. Gradually add the powdered sugar, alternating with the milk, beating until smooth and fluffy. Stir in the vanilla extract.
  12. If desired, divide the frosting into portions and tint with food coloring.
  13. Once the cakes are completely cool, frost them. You can add more sprinkles on top for extra decoration.
