  • 1.5 lbs Boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 4 Tablespoons Unsalted butter
  • 4 Cloves Garlic, minced
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black pepper
  • 1 Tablespoon Fresh parsley, chopped (for garnish)
  • 1 Teaspoon Lemon juice (optional)

Instructions

  1. Pat the chicken pieces completely dry with paper towels. Season evenly with salt and pepper.
  2. Place a large skillet over medium-high heat. Add half of the butter.
  3. Once the butter melts and foams, add the chicken to the skillet in a single layer. Do not overcrowd the pan; cook in batches if necessary.
  4. Sear the chicken for 3 to 4 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside.
  5. Reduce the heat to medium-low. Add the remaining butter to the skillet.
  6. Add the minced garlic to the melted butter. Cook for about 30 to 60 seconds until fragrant. Do not let the garlic brown.
  7. Return the cooked chicken bites to the skillet. Toss gently to coat everything thoroughly in the garlic butter sauce.
  8. Stir in the lemon juice, if using.
  9. Remove from heat. Garnish with fresh parsley before serving immediately.
