These Garlic Butter Roasted Carrots deliver big flavor with minimal effort. You get perfectly tender carrots with sweet caramelized edges coated in a rich, savory garlic butter sauce. This is the easy side dish you will want to make again and again.

Ingredients

Scale
  • 1 pound carrots, peeled and sliced lengthwise
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the prepared carrots on a large baking sheet.
  3. In a small bowl, whisk together the melted butter, minced garlic, salt, and pepper.
  4. Pour the butter mixture over the carrots. Toss well until all carrots are evenly coated.
  5. Spread the carrots into a single layer on the baking sheet. Do not overcrowd the pan.
  6. Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
  7. Remove from the oven, garnish with fresh parsley, and serve immediately.

Notes

  • For extra sweetness, toss the carrots with 1 teaspoon of maple syrup before roasting.
  • If your carrots are very thick, slice them into smaller pieces to ensure even cooking.
  • Use fresh garlic for the best flavor payoff.
