1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1/2 cup chicken broth
1 cup uncooked long-grain white rice
1/2 cup water
1/4 cup heavy cream (optional, for creaminess)
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley, chopped
Instructions
Season the shrimp with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
Reduce the heat to medium. Add 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
Add the uncooked rice and the water to the skillet. Bring the mixture to a simmer.
Cover the skillet tightly, reduce the heat to low, and cook for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
Remove the skillet from the heat. Stir in the remaining 2 tablespoons of butter, heavy cream (if using), and lemon juice. Fluff the rice gently with a fork.
Fold the cooked shrimp and chopped parsley back into the rice mixture.
Serve immediately.
Notes
For perfectly cooked shrimp, cook them just until they turn opaque and pink. Overcooking makes them tough.
If you prefer a vegetable addition, stir in 1 cup of frozen peas or chopped spinach during the last 5 minutes of the rice cooking time.
Use pre-cooked rice for an even faster meal, adding it in step 7 with the butter and liquids.
