  • 1 lb baby potatoes, halved or quartered

  • 4 cloves garlic, minced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Toss the potatoes with 1 tablespoon of olive oil, salt, and pepper.
  2. Heat 1 tablespoon of butter and the remaining 1 tablespoon of olive oil in a large, heavy skillet over medium-high heat.
  3. Add the potatoes to the skillet in a single layer. Cook for 10-12 minutes, turning occasionally, until they are golden brown and tender. Remove potatoes and set aside.
  4. Pat the steak bites dry with paper towels. Season the steak cubes with remaining salt and pepper.
  5. Add the remaining 3 tablespoons of butter to the same skillet. Once melted, add the minced garlic, rosemary, and thyme. Cook for 30 seconds until fragrant.
  6. Increase the heat to high. Add the steak bites to the skillet in a single layer. Sear for 2-3 minutes per side for medium-rare, adjusting time for your preference. Do not overcrowd the pan; cook in batches if necessary.
  7. Return the cooked potatoes to the skillet with the steak. Toss everything gently to coat in the garlic butter sauce.
  8. Remove from heat. Garnish generously with fresh parsley before serving immediately.
