  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. Season the scallops generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add scallops to the skillet in a single layer, ensuring not to overcrowd the pan. Sear for 1.5-2 minutes per side, until golden brown and cooked through. Remove scallops from the skillet and set aside.
  4. Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 30 seconds.
  5. If using, add white wine to the skillet and scrape up any browned bits from the bottom. Let it simmer for 1 minute.
  6. Stir in lemon juice and parsley. Season with salt and pepper to taste.
  7. Return scallops to the skillet and toss gently to coat them in the sauce.
  8. Serve immediately.
