  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • Oil for frying (about 2-3 cups)

Instructions

  1. Set up your dredging station. Place flour in one shallow dish. Whisk eggs in a second shallow dish. In a third dish, combine panko breadcrumbs, 1/2 cup Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  2. Pat the chicken strips dry with paper towels. This step helps the coating stick.
  3. Dredge each chicken strip first in the flour, shaking off any excess.
  4. Dip the floured chicken into the beaten egg, letting extra egg drip off.
  5. Press the chicken firmly into the breadcrumb mixture, coating completely. Place coated tenders on a clean plate.
  6. Heat about 2 inches of oil in a heavy-bottomed pot or deep skillet to 350°F (175°C). Use a thermometer to monitor the temperature.
  7. Carefully place 4-5 tenders into the hot oil, avoiding overcrowding the pan.
  8. Fry for 3-4 minutes per side, turning once, until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  9. Remove tenders with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
