2 large sweet potatoes, peeled and cut into 1-inch cubes
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Place the cubed sweet potatoes in a large bowl. Drizzle with olive oil, salt, pepper, garlic powder, and oregano. Toss until the potatoes are evenly coated.
Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan.
Roast for 20 minutes.
Remove the pan from the oven. Sprinkle the minced garlic and grated Parmesan cheese over the potatoes. Gently toss them on the pan.
Return the pan to the oven and roast for another 10 to 15 minutes, or until the potatoes are tender when pierced with a fork and the cheese is golden brown.
Serve immediately.
Notes
For extra crispiness, ensure the potatoes are in a single layer on the baking sheet during the first roasting period.
If you prefer a stronger garlic flavor, use 1 teaspoon of fresh minced garlic in step 2 instead of the powder, and add the fresh minced garlic in step 5.
You can substitute dried parsley for oregano if desired.
