  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 1/4 cup Parmesan Cheese, grated
  • 2 tablespoons Butter (or unsalted butter)
  • 1 tablespoon Fresh Parsley, chopped (for garnish)
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut the spaghetti squash in half lengthwise. Scoop out and discard the seeds.
  3. Place the squash halves cut-side down on a baking sheet lined with parchment paper.
  4. Roast for 30 to 40 minutes, or until the squash is tender when pierced with a fork.
  5. Let the squash cool slightly. Use a fork to scrape out the strands into a large bowl. Discard the skins.
  6. In a small skillet over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
  7. Pour the garlic butter mixture over the spaghetti squash strands.
  8. Add the grated Parmesan cheese, salt, and pepper. Toss everything gently until the squash is evenly coated.
