  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt

  • 2 large eggs, beaten
  • Vegetable oil, for frying
  • For the Sauce:
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/3 cup rice vinegar
  • 1/3 cup granulated sugar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1 teaspoon red pepper flakes (or to taste)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • For Garnish:
  • Cooked white rice
  • Scallions, chopped
  • Sesame seeds

Instructions

  1. In a shallow dish, whisk together flour, cornstarch, salt, and pepper.
  2. In another shallow dish, beat the eggs.
  3. Dip each chicken piece first in the beaten eggs, then dredge in the flour mixture, ensuring it’s fully coated.
  4. Heat about 2-3 inches of vegetable oil in a large skillet or Dutch oven to 350°F (175°C).
  5. Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels.
  6. While the chicken is frying, prepare the sauce. In a medium saucepan, combine chicken broth, soy sauce, rice vinegar, sugar, hoisin sauce, sesame oil, and red pepper flakes.
  7. In a small bowl, whisk together 1 tablespoon cornstarch and 1/4 cup water to make a slurry.
  8. Add minced garlic and grated ginger to the sauce in the saucepan. Bring to a simmer over medium heat.
  9. Slowly whisk the cornstarch slurry into the simmering sauce until it thickens. Cook for 1-2 minutes more.
  10. Add the fried chicken pieces to the thickened sauce and toss to coat evenly.
  11. Serve immediately over cooked white rice, garnished with chopped scallions and sesame seeds.

  • For extra crispy chicken, ensure the oil is at the correct temperature and don’t overcrowd the pan.
  • Adjust the red pepper flakes to control the spice level.
  • You can substitute chicken breast for thighs, but thighs tend to stay more moist.
