  • 1 block (14-16 oz) extra-firm tofu, pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 pound mixed stir-fry vegetables (broccoli florets, bell pepper strips, snap peas, carrots)
  • 2 tablespoons vegetable oil
  • 1/4 cup vegetable broth
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)

Instructions

  1. In a bowl, toss tofu cubes with soy sauce and cornstarch.
  2. Heat sesame oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown on all sides. Remove tofu from skillet and set aside.
  3. Add vegetable oil to the same skillet. Add ginger and garlic and cook for 30 seconds until fragrant.
  4. Add mixed vegetables and stir-fry for 5-7 minutes until tender-crisp.
  5. In a small bowl, whisk together vegetable broth, honey or maple syrup, and rice vinegar.
  6. Pour the sauce over the vegetables and bring to a simmer. Cook for 1-2 minutes until slightly thickened.
  7. Return the tofu to the skillet and toss to coat with the sauce.
  8. Serve immediately over cooked rice, garnished with sesame seeds if desired.
