A festive twist on the classic Italian dessert, this Gingerbread Chai Tiramisu combines the warm spices of gingerbread with the aromatic notes of chai tea. Layers of tender gingerbread cake are soaked in a spiced chai syrup and nestled between clouds of creamy mascarpone filling. It’s a perfect holiday treat that brings together comforting flavors in a unique and delightful way.

  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup unsulfured molasses
  • 1/2 cup hot water
  • 2 cups strong brewed chai tea, cooled
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 16 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Pinch of ground cloves
  • Optional: Whipped cream, gingerbread cookie crumbs, or cinnamon sticks for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In a small bowl, whisk together the molasses and hot water.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the molasses mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool completely in the pan.
  9. While the cake cools, prepare the chai syrup. In a small saucepan, combine the brewed chai tea and 1/4 cup granulated sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. In a small bowl, whisk the cornstarch with 2 tablespoons of cold water to create a slurry. Pour the slurry into the simmering chai mixture and whisk constantly until the syrup thickens slightly. Remove from heat and let cool completely.
  10. Prepare the mascarpone filling. In a large bowl, beat the softened mascarpone cheese, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, and a pinch of cloves until smooth and creamy.
  11. Once the gingerbread cake is completely cool, cut it into 1-inch cubes.
  12. Arrange half of the gingerbread cake cubes in a single layer in the bottom of your serving dish or individual glasses.
  13. Brush the cake cubes generously with about half of the cooled chai syrup.
  14. Spread half of the mascarpone filling evenly over the chai-soaked cake.
  15. Repeat the layers: add the remaining gingerbread cake cubes, brush with the remaining chai syrup, and top with the remaining mascarpone filling.
  16. Cover the tiramisu and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the cake to soften.
  17. Before serving, garnish with whipped cream, gingerbread cookie crumbs, or cinnamon sticks if desired.
