1 teaspoon unflavored gelatin
2 tablespoons cold water
2 cups heavy cream
1/2 cup milk
1/2 cup granulated sugar
1/4 cup brewed coffee, cooled
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
Pinch of black pepper
Instructions
In a small bowl, sprinkle gelatin over cold water. Let stand for 5 minutes to bloom.
In a medium saucepan, combine heavy cream, milk, and sugar. Heat over medium heat, stirring until sugar dissolves. Do not boil.
Remove from heat. Stir in the bloomed gelatin mixture until dissolved.
Whisk in the cooled coffee, ground ginger, cinnamon, nutmeg, cloves, and black pepper.
Pour the mixture into individual serving glasses or ramekins.
Cover and refrigerate for at least 4 hours, or until firm.
Serve chilled.
Notes
For an extra festive touch, garnish with whipped cream and a sprinkle of cinnamon before serving.
