1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 tablespoon brown sugar
1 1/4 cups milk
1 egg
3 tablespoons melted butter
1/4 cup molasses
Instructions
Combine the flour, baking powder, salt, ginger, cinnamon, cloves, nutmeg, and brown sugar in a large bowl. Whisk these dry ingredients together.
In a separate bowl, whisk together the milk, egg, melted butter, and molasses.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; lumps are okay.
Heat a lightly oiled griddle or large skillet over medium heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Cook for 2 to 3 minutes per side, until bubbles form on the surface and the edges look set. Flip and cook until golden brown.
Serve immediately with your favorite toppings.
Notes
Use dark molasses for the deepest gingerbread flavor.
You can substitute buttermilk for milk and reduce the baking powder by 1/2 teaspoon for extra tang.
Keep finished pancakes warm in a single layer on a baking sheet in a low oven (200°F) while you cook the remaining batter.
