1.5 lb carrots, peeled and cut into 1-inch pieces
3 tablespoons unsalted butter, melted
3 tablespoons honey
2 cloves garlic, minced
1 tablespoon soy sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
Place the cut carrots in a large bowl.
In a small bowl, whisk together the melted butter, honey, minced garlic, and soy sauce until well combined. This forms your glaze base.
Pour half of the glaze mixture over the carrots. Toss to coat the carrots evenly. Reserve the remaining half of the glaze for basting later.
Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan.
Roast for 15 minutes.
Remove the pan from the oven. Drizzle the reserved glaze mixture over the carrots and toss gently right on the pan.
Return the carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender when pierced with a fork and the glaze is caramelized and sticky. Watch carefully during the last few minutes to prevent burning.
Remove from the oven, sprinkle with salt, pepper, and fresh parsley. Serve immediately.
Notes
If your carrots are very thick, cut them into smaller pieces or roast them for an extra 5 minutes before adding the glaze to ensure they cook through evenly.
For a thicker glaze, you can simmer the reserved glaze mixture on the stovetop for 2 minutes before basting, but be careful not to let it burn.
If you prefer a less sweet flavor, reduce the honey to 2 tablespoons.
