  • 2 ¼ teaspoons active dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil, plus more for greasing
  • 1 large egg
  • 1 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 1 cup tapioca starch
  • ½ cup potato starch
  • 2 tablespoons psyllium husk powder

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Stir in salt, olive oil, and egg.
  3. In a separate bowl, whisk together gluten-free flour blend, tapioca starch, potato starch, and psyllium husk powder.
  4. Add the dry ingredients to the wet ingredients and mix until a smooth, sticky dough forms.
  5. Cover the bowl with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  6. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
  7. Gently punch down the dough. Divide the dough into 8-10 equal portions.
  8. Shape each portion into a ball and place them on the prepared baking sheet, leaving some space between them.
  9. Bake for 20-25 minutes, or until golden brown and sound hollow when tapped.
  10. Let cool on a wire rack before serving.

Notes

  • Ensure your gluten-free flour blend contains xanthan gum. If it doesn’t, add 1 teaspoon of xanthan gum to the dry ingredients.
  • The dough will be sticky; this is normal for gluten-free bread. Avoid adding too much extra flour.
  • For softer rolls, you can brush them with melted butter immediately after they come out of the oven.
