2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger

1/2 teaspoon salt
1 cup pumpkin puree
1 and 1/4 cups milk (dairy or non-dairy)
2 large eggs
2 tablespoons unsalted butter, melted, plus more for cooking
1 teaspoon vanilla extract
Instructions
In a large bowl, whisk together the gluten-free flour, sugar, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
In a separate medium bowl, whisk together the pumpkin puree, milk, eggs, melted butter, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are okay; do not overmix.
Heat a lightly oiled griddle or non-stick skillet over medium heat.
Pour or scoop about 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when you see bubbles forming on the surface.
Serve immediately with your favorite toppings like maple syrup, whipped cream, or extra cinnamon.
Notes
Ensure your gluten-free flour blend contains xanthan gum. If it does not, add 1/2 teaspoon of xanthan gum to the dry ingredients.
For thicker pancakes, use slightly less milk. For thinner pancakes, add a tablespoon or two more milk.
You can make the batter ahead of time and store it in the refrigerator for up to 24 hours. You may need to add a splash more milk when ready to cook.
