Make these soft, chewy cookies packed with ripe banana flavor and optional chocolate chips. This recipe uses overripe bananas for the best taste.

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed very ripe bananas (about 3 medium)
  • 1 cup rolled oats
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until just combined.
  5. Mix in the mashed bananas until incorporated.
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Stir in the rolled oats and chocolate chips by hand.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use bananas that are heavily spotted or almost black for the strongest banana flavor.
  • For a nuttier cookie, substitute 1/2 cup of the chocolate chips with chopped walnuts or pecans.
  • If you prefer a less sweet cookie, reduce the granulated sugar by one tablespoon.
