A refreshing and bright ceviche featuring tender shrimp marinated in tangy grapefruit juice, mixed with fresh herbs and a hint of spice. It’s a perfect light starter.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup fresh grapefruit juice (from about 2 grapefruits)
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon chopped fresh mint
  • 1 jalapeño, seeded and finely minced (optional)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cut the shrimp into bite-sized pieces.
  2. In a glass bowl, combine the shrimp with the grapefruit juice. Ensure the shrimp is fully submerged.
  3. Cover the bowl and refrigerate for at least 30 minutes, or until the shrimp turns pink and opaque.
  4. Drain most of the grapefruit juice from the shrimp, leaving about 1 tablespoon in the bowl.
  5. Add the chopped red onion, cilantro, mint, and jalapeño (if using) to the bowl with the shrimp.
  6. Drizzle with olive oil and season with salt and pepper.
  7. Toss gently to combine all ingredients.
  8. Serve immediately or chill for up to 30 minutes before serving.

Notes

  • Adjust the amount of jalapeño to your preference for spice.
  • For a milder flavor, remove the seeds and membranes from the jalapeño before mincing.
  • You can substitute lime juice for half of the grapefruit juice for a more traditional ceviche flavor.
  • Serve with tortilla chips, plantain chips, or lettuce cups.
