4 large bell peppers, any color
1 cup uncooked long-grain white rice
2 cups chicken or vegetable broth
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried dill
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crumbled feta cheese
1/4 cup Kalamata olives, pitted and chopped
1/4 cup chopped fresh parsley
1 (15 ounce) can tomato sauce
Instructions
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a medium saucepan, combine the rice and broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Let stand for 5 minutes, then fluff with a fork.
While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, oregano, and dill and cook for 1 minute more until fragrant.
In a large bowl, combine the cooked rice, the onion mixture, feta cheese, olives, and parsley. Mix well.
Spoon the rice mixture evenly into the prepared bell peppers.
Pour the tomato sauce into the bottom of a baking dish.
Place the stuffed peppers upright in the baking dish.
Cover the baking dish with foil.
Bake for 45 minutes, or until the peppers are tender.
Remove the foil and bake for another 10-15 minutes, or until the tops are lightly golden.
