Make a quick, high-protein chicken salad using Greek yogurt instead of mayonnaise. This recipe is ready in 15 minutes and works well with pre-cooked rotisserie chicken for easy meal prep.

  • 2 cups cooked, shredded chicken (rotisserie is perfect)
  • 1 cup plain Greek yogurt (2% or full fat recommended for texture)
  • 1/4 cup finely chopped celery
  • 1/4 cup halved red grapes (optional)
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh dill or parsley

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, whisk together the Greek yogurt, lemon juice, and Dijon mustard until smooth.
  3. Pour the yogurt mixture over the chicken. Add the celery, red onion, salt, and pepper.
  4. Fold all ingredients together gently until the chicken is evenly coated. Do not overmix.
  5. Stir in the fresh dill or parsley.
  6. Taste the salad and adjust salt or pepper as needed.
  7. Serve immediately or chill for 30 minutes for flavors to combine.

Notes

  • For a Buffalo flavor variation, omit the grapes and dill. Mix in 2 tablespoons of hot sauce and 1/2 teaspoon of garlic powder with the yogurt dressing.
  • If you prefer a tangier flavor, substitute half of the Greek yogurt with plain cottage cheese blended until smooth.
  • This salad keeps well in the refrigerator for up to 4 days when stored in an airtight container.
