  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons crumbled cotija cheese

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil and season lightly with salt and pepper.
  3. Grill the corn, turning occasionally, until charred in spots and tender, about 8-10 minutes.
  4. While the corn is grilling, whisk together the mayonnaise, sour cream, lime juice, chili powder, and cayenne pepper (if using) in a small bowl. Season with salt and pepper to taste.
  5. Once the corn is grilled, carefully remove it from the grill.
  6. Spread the mayonnaise mixture evenly over each ear of corn.
  7. Sprinkle the chopped cilantro and crumbled cotija cheese over the top.
  8. Serve immediately.

Notes

  • For extra flavor, you can grill the corn in its husks, removing them just before serving.
  • If you don’t have cotija cheese, feta cheese can be substituted.
  • Adjust the chili powder and cayenne pepper to your spice preference.
