2 boneless, skinless chicken breasts
2 ripe peaches, halved and pitted
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1/4 cup balsamic vinaigrette
4 cups mixed greens
1/4 cup crumbled feta cheese
1/4 cup toasted pecans
Instructions
Preheat grill to medium-high heat.
Brush chicken breasts with 1/2 tablespoon olive oil and season with salt and pepper.
Brush peach halves with remaining 1/2 tablespoon olive oil.
Grill chicken for 6-8 minutes per side, or until cooked through. Remove from grill and let rest.
Grill peaches cut-side down for 3-4 minutes, until grill marks appear and peaches are slightly softened.
Slice grilled chicken.
Arrange mixed greens on a platter.
Top with sliced grilled chicken, grilled peaches, feta cheese, and toasted pecans.
