1 pound salmon fillet
1/2 cup teriyaki sauce
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 cup fresh pineapple chunks
1 tablespoon olive oil
Salt and pepper to taste
Instructions
In a bowl, whisk together teriyaki sauce, soy sauce, honey, ginger, and garlic.
Place salmon fillet in a shallow dish and pour half of the teriyaki marinade over it. Let it marinate for at least 30 minutes.
While the salmon marinates, toss pineapple chunks with olive oil, salt, and pepper.
Preheat your grill to medium-high heat.
Grill the pineapple chunks for 2-3 minutes per side, until slightly charred and caramelized. Remove from grill and set aside.
Place the salmon fillet on the preheated grill. Discard the remaining marinade.
Grill salmon for 4-6 minutes per side, or until cooked through and flakes easily with a fork.
Serve the grilled salmon topped with the grilled pineapple chunks.
Notes
For an extra tropical flavor, you can add a splash of pineapple juice to the marinade.
If fresh pineapple is not available, canned pineapple chunks can be used, but be sure to drain them well.
Adjust grilling time based on the thickness of your salmon fillet.
