  • 1 lb ground chicken
  • 1 tbsp vegetable oil
  • 1 cup broccoli florets
  • 1 large carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup soy sauce (low sodium preferred)
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Cooked rice or noodles, for serving

Instructions

  1. In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, cornstarch, and water to make the teriyaki sauce. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the ground chicken to the skillet. Break it up with a spoon and cook until browned through, about 5 to 7 minutes. Drain off any excess fat.
  4. Add the broccoli and carrots to the skillet with the chicken. Stir fry for 3 minutes until the vegetables start to become tender-crisp.
  5. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  6. Pour the prepared teriyaki sauce mixture over the chicken and vegetables.
  7. Stir constantly as the sauce thickens, about 1 to 2 minutes.
  8. Remove from heat immediately once the sauce coats everything evenly.
  9. Serve hot over your choice of cooked rice or noodles.

Notes

  • For extra flavor, add a pinch of red pepper flakes when you add the garlic and ginger.
  • If you do not have fresh ginger, use 1/2 teaspoon of ground ginger instead.
  • You can substitute the broccoli and carrots with other quick-cooking vegetables like snap peas or bell peppers.
